Apple Spice Cake with Maple Glaze – Friday Flashback #79

Apple Spice CakeI’ve been thinking about doing a “flashback” on some of the things I’ve posted over the years. I’m not sure when we started this blog and I am amazed when I look back over all the posts! We have over 800. Some of them are worth repeating and many of them can certainly have a better photo shoot than when we first got started.

Thinking back to when my daughter first suggested this I was overwhelmed and had no idea my world (or corner of it anyway) could revolve around a food blog. Little did I think we would be doing this for such a long time. To be honest, I would miss it if I didn’t have so many friends to keep up with, recipes to share and take to so many parties each week.Looking back is half the fun!

Apples, pumpkin, spices and colorful autumn leaves are on my mind.  Not in the weather, at least here, but we’ve sort of turned the corner on an approaching new season.  I adore the Fall and all it brings.  Mostly I think of the lovely colors of all the leaves in places that have trees that turn, warm aromas from the kitchen and a time of gathering the family for Thanksgiving.   I’m still wearing my summer gardening clothes outside and sandals.  But since it is almost Labor Day I’ll begin to switch my closets around for a few long sleeves at least.  That won’t be totally necessary until Halloween at least.  How about you?  What inspires you about Fall?

This Apple Spice Cake is a dense and moist cake with all the flavors of Fall (except pumpkin). Easy to make and delicious!

Cake
  1. Preheat the oven to 350°. Grease and flour a 12-cup Bundt pan.
  2. I used my apple peeler/corer/sliced to quickly prepare the apples. (I know that’s why these apple recipes are so easy to make.) I just adore that little mechanical device.
  3. In the mixing bowl of my Kitchen Aid stand mixer with the paddle attachment combine the sugar, oil, eggs, and vanilla.
  4. In a separate bowl combine the flour, soda, salt, cinnamon, allspice, and nutmeg. Whisk to distribute the dry ingredients. Add these to the mixing bowl and mix just until well incorporated.
  5. Fold in the apples and pour into the prepared cake pan.
  6. Bake for 1 hour to 1 hours 15 minutes, or until a tester comes out clean.
  7. As soon as the cake comes out of the oven let it cool in the pan on a wire rack for 10 minutes. Run a knife around the edges and invert on the cake plate.
Glaze
  1. While the cake is cooling in those 10 minutes prepare the glaze. Bring the butter, maple syrup and milk to a low boil and stir constantly for 2 minutes. Immediately spoon the glaze over the cake.
  2. Decoratively add the pecan halves. Store in an airtight container when cooled.
  3. Serve with whipped cream or ice cream.
